Aussie bush damper for dummies
Often discussed but not often prepared as many don’t have the chance to use a camp oven to bake the damper in.
Here is an easy way to make your next BBQ with dampers that are always right on the spot.
For four, you need:
1 cup self raising flour
Good pinch of salt, pepper
Cold beer
For a de luxe version add:
½ cup fine chopped tasty cheese (even blue cheese)
½ cup fine chopped bacon
Procedure
Add all dry material together and mix well.
Slowly add beer to make soft, non sticky dough.
Do not knead as you release gluten that makes the damper hard.
Form little patties, about the size of a fried egg, 10 mm thick.
Bake these on a dry BBQ without any oil or fat or even in a dry frying pan.
When golden brown, do the finger test by snipping a finger on the damper, when you hear a hollow sound they are done.
